Initiatives for 130 Year Anniversary
Hotel Eden, 5-star luxury hotel of the Dorchester Collection, is preparing to celebrate an important anniversary: 130 years have passed since the hotel opened its doors in 1889. To celebrate it and share it with its guests, Hotel Eden has created a series of initiatives available until the end of the year, a cocktail, a dish and a Spa ritual created ad hoc.
Royal Eden
Silvio Favot, historic ex bar manager of the Hotel Eden, created a new recipe for Constantine II of Greece many years ago and the drink immediately became the favorite of the queen mother Federica. For a long time the ingredients remained secret, but today Il Giardino Bar offers this celebratory cocktail with the original recipe based on: vodka, dry vermouth, Campari, tonic water and drops of orange bitter.
Octopus and Celery
It is a dish that belongs to the tradition of Hotel Eden. The Executive Chef Fabio Ciervo has found the recipe in the historic menus of the hotel, and today he interprets the dish in a contemporary version at the starred restaurant La Terrazza.
The Garden of Eden
In 1889, the year when the Hotel was opened, the Italian writer Gabriele D’Annunzio, who stayed at the hotel, published “Il Piacere”, dedicated to the pleasure of the senses. To celebrate this masterpiece, The Eden Spa has created a ritual in collaboration with Mei: a 130-minute sensory journey with fig fragrance and rose and jasmine essential oils, for a sinuous body and radiant facial skin.
Outdoor swimming pool
When the summer heat arrives in Rome, there’s no better feeling than cooling off with a refreshing swim, so Hotel Eden partnered with the historic Roma Polo Club just a few minutes from the hotel, to give you full access to their beautiful swimming pool and club house. Hotel Service also drop you off in the morning, collect you in the afternoon and provide a pool kit with towels, flip-flops, water and sun cream. Open Tuesday to Sunday, July 2nd to September 15th. To refresh the palate thinks the Executive Chef Fabio Boschero with his new menu. For the summer 2019, the Chef designed new dishes in which traditional flavors are combined with the fresh flavors of seasonal fruit. Thus was born the appetizer of “Misticanza with goat cheese, pineapple, fennel and pumpkin seeds”, or the “Carpaccio of sea bass with knife, mango and Chili vinaigrette”, continuing with a selection of cold soups, such as “Melone summertime with Cantalupo al Marsala pearls “, and first courses, including” Pici Toscani, diced raw tuna, lemon and anchovy sauce “. The desserts and the selection of home-made artisan gelato are created by the Executive Pastry Chef Dario Nuti, such as the “Delizia with ricotta, sour cherries and black sesame”.

Island Hopping around the Italian Pontine Islands

New Acquolina’s Executive Chef
Daniele Lippi is the new Executive Chef of Acquolina. Born in 1990, Lippi grew up at the Troiani brothers’ school – working for nine years at the Convivio Troiani (1 Michelin Star), where he was Head Chef of the last three – but he perfected his style with various “incursions” at the top of the international starry scene: from Yannick Alléno, to Pavillion Ledoyen of Paris, to Enrico Crippa, Piazza Duomo of Alba, to Grant Achat, at Alinea Restaurant in Chicago, and again in Spain with Paolo Casagrande at Martin Bersategui’s Lasarte. Lippi plays between reality and appearance, mixing the cards on the table and challenging the public to see beyond what’s on the plate.
