The autumn menu of the Uliveto restaurant
On Monday 28 October the autumn menu signed by Executive Chef Fabio Boschero for the Uliveto restaurant will officially enter into force. Following the seasonality and selecting the best raw materials of the territory, the menu proposes, among other things, the “raw red prawns with chickpea aio, oio & pepperoncino” crumble, the “Risotto al Suppli al telefono ‘”, the “Gnocchi cacio e pepe con curcuma ”and the “Coccio con Polpo verace on cannellini beans”. Don’t miss the desserts of Dario Nuti, first of all the “Sweet saffron and almond risotto with prickly pear sorbet”: born from the gustatory suggestions of his childhood, the traditional sweet rice of poor Italian cuisine is combined with typically Sicilian ingredients.

“Forest Bathing” of Cavalieri Grand Spa Club
Inspired by the Japanese practice (shinrin-yoku) of diving in the woods, the Forest Bathing teaches how to benefit from apparently simple activities, like a walk in the woods, breathing the essences of trees and plants, time to time invigorating or relaxing. The position of Rome Cavalieri and its Spa allow the realization of a complete and articulated Forest Therapy program. The hotel is immersed in a Mediterranean park and borders one of the most authentic and vast natural parks in the city: the Monte Mario nature reserve, which for its environmental characteristics is a true mosaic of biological diversity now rare in a city. At the Cavalieri Grand Spa Club it is therefore possible to enjoy a real immersion in the woods followed by an effective wellness treatment. After the walk in the hotel park, you return to the Spa and relax with a hydromassage, eliminate toxins with a sauna or a Turkish bath and then rely on the skilled hands of the Forest Bathing Treatment therapists.

130 Years of Eden Experiences
Hotel Eden, 5-star luxury hotel of the Dorchester Collection, is celebrating an important anniversary: 130 years have passed since the hotel opened its doors in 1889. To celebrate it and share it with its guests, Hotel Eden has created a series of initiatives available until the end of the year, a cocktail, a dish and a Spa ritual created ad hoc.
Royal Eden
Silvio Favot, historic ex bar manager of the Hotel Eden, created a new recipe for Constantine II of Greece many years ago and the drink immediately became the favorite of the queen mother Federica. For a long time the ingredients remained secret, but today Il Giardino Bar offers this celebratory cocktail with the original recipe based on: vodka, dry vermouth, Campari, tonic water and drops of orange bitter.
Octopus and Celery
It is a dish that belongs to the tradition of Hotel Eden. The Executive Chef Fabio Ciervo has found the recipe in the historic menus of the hotel, and today he interprets the dish in a contemporary version at the starred restaurant La Terrazza.
The Garden of Eden
In 1889, the year when the Hotel was opened, the Italian writer Gabriele D’Annunzio, who stayed at the hotel, published “Il Piacere”, dedicated to the pleasure of the senses. To celebrate this masterpiece, The Eden Spa has created a ritual in collaboration with Mei: a 130-minute sensory journey with fig fragrance and rose and jasmine essential oils, for a sinuous body and radiant facial skin.
