The autumn menu of the Uliveto restaurant
On Monday 28 October the autumn menu signed by Executive Chef Fabio Boschero for the Uliveto restaurant will officially enter into force. Following the seasonality and selecting the best raw materials of the territory, the menu proposes, among other things, the “raw red prawns with chickpea aio, oio & pepperoncino” crumble, the “Risotto al Suppli al telefono ‘”, the “Gnocchi cacio e pepe con curcuma ”and the “Coccio con Polpo verace on cannellini beans”. Don’t miss the desserts of Dario Nuti, first of all the “Sweet saffron and almond risotto with prickly pear sorbet”: born from the gustatory suggestions of his childhood, the traditional sweet rice of poor Italian cuisine is combined with typically Sicilian ingredients.
Five O’clock Tea and Cocktails at Tiepolo Bar
The cold season invites afternoons and evenings spent lingering with a good cocktail or an invigorating five o’clock tea (in the picture). Pastry Chef Dario Nuti has designed a specific tea for the Tiepolo Bar: next to a superlative selection of the best infusions we find a parade of biscuits, sweets and snacks. For the winter aperitifs the Rome Cavalieri Mixologist Angelo Severini suggests the CH-estnut, based on Vodka Gray Goose Poire with white cocoa cream served with chestnut whipped cream; alcohol at the right point and invigorating in the winter cold.

“Forest Bathing” of Cavalieri Grand Spa Club
Inspired by the Japanese practice (shinrin-yoku) of diving in the woods, the Forest Bathing teaches how to benefit from apparently simple activities, like a walk in the woods, breathing the essences of trees and plants, time to time invigorating or relaxing. The position of Rome Cavalieri and its Spa allow the realization of a complete and articulated Forest Therapy program. The hotel is immersed in a Mediterranean park and borders one of the most authentic and vast natural parks in the city: the Monte Mario nature reserve, which for its environmental characteristics is a true mosaic of biological diversity now rare in a city. At the Cavalieri Grand Spa Club it is therefore possible to enjoy a real immersion in the woods followed by an effective wellness treatment. After the walk in the hotel park, you return to the Spa and relax with a hydromassage, eliminate toxins with a sauna or a Turkish bath and then rely on the skilled hands of the Forest Bathing Treatment therapists.

130 Years of Eden Experiences
Hotel Eden, 5-star luxury hotel of the Dorchester Collection, is celebrating an important anniversary: 130 years have passed since the hotel opened its doors in 1889. To celebrate it and share it with its guests, Hotel Eden has created a series of initiatives available until the end of the year, a cocktail, a dish and a Spa ritual created ad hoc.
Royal Eden
Silvio Favot, historic ex bar manager of the Hotel Eden, created a new recipe for Constantine II of Greece many years ago and the drink immediately became the favorite of the queen mother Federica. For a long time the ingredients remained secret, but today Il Giardino Bar offers this celebratory cocktail with the original recipe based on: vodka, dry vermouth, Campari, tonic water and drops of orange bitter.
Octopus and Celery
It is a dish that belongs to the tradition of Hotel Eden. The Executive Chef Fabio Ciervo has found the recipe in the historic menus of the hotel, and today he interprets the dish in a contemporary version at the starred restaurant La Terrazza.
The Garden of Eden
In 1889, the year when the Hotel was opened, the Italian writer Gabriele D’Annunzio, who stayed at the hotel, published “Il Piacere”, dedicated to the pleasure of the senses. To celebrate this masterpiece, The Eden Spa has created a ritual in collaboration with Mei: a 130-minute sensory journey with fig fragrance and rose and jasmine essential oils, for a sinuous body and radiant facial skin.

Elisabeth Unique Hotel
Bar Bacharach & Bistrot
The Bar Bacharach & Bistrot invokes the versatile nature of places conceived to be shared. The name is a deliberate tribute to Burt Bacharach, the famous composer and pianist who sublimely interpreted the lively and magical atmosphere of the second half of the twentieth century in America. In the morning, you can linger over freshly baked brioches, muffins and tarts, spiced teas and perfectly balanced infusions, the clear reinvigorating flavours of seasonal fruit, and superb compositions of soft and velvety eggs. Elizabeth’s breakfast is an à la carte brunch that reveals the gracefulness and discretion of noble english breakfasts. The Restaurant offer continues with a collection of creative menus inspired by the traditions of Italian gastronomy and enriched with international suggestions. Each dish is an unprecedented combination of flavours which come together in every dish. The Bar menu is a tribute to Italy and offers a collection of signature cocktails dedicated to its regions and a selection of only the finest Italian wines exclusively selected by Luca Maroni, an illustrious name in Italian oenology. The aperitivo is a generous creative introduction to the poetry of a Roman dinner. Drinks and glasses of wine are served with delicious sets of homemade finger food. Many ingredients come from the family estates, from the olive grove to the dairy farms that produces homemade mozzarella and thus guarantee excellent genuine local products.
Concierge
The Elizabeth Unique Hotel, true to its philosophy, provides the opportunity to organize unique cultural experiences. Each day can be studied and articulated based on the guests’ preference, so that everyone can find their own personal vision of the city.
Palazzo Manfredi
The Court
On the Ludus Magnus, the ancient gladiator gym, and with the Colosseum in the background, The Court is Palazzo Manfredi’s new lounge; the space develops between the counter worked in travertine with seats on one side, the living room on the other and a walkway that separates them. The cocktails are signed by Matteo Zed, an eclectic and daring bartender with international experiences between Japan and America. The drink list is structured on three chapters: in addition to the classic aperitifs, you can choose between the signatures and the seasonal and a selection of “Forgotten Classics & Unforgettable”, all those forgotten and timeless cocktails that have made the history of mixology. Of all, the Martini cocktail in the Roman style version deserves a mention. In addition to a good beverage, The Court offers the gourmet experience signed by Aroma Executive Chef Giuseppe Di Iorio (1 Michelin Star). From the first light of sunset to after midnight, The Court welcomes its guests in a fancy and elegant atmosphere.

Hotel Vilòn
This Small Luxury (only 18 rooms) is the newest in the centre of Rome. It occupies the annex of the mid-16th century Palazzo Borghese that once housed the School for Maidens. Paolo Bonfini, a roman scenographer, and Giampiero Panepinto, a milanese architect, brought eclectic and contemporary design into this centuries-old space. The bar-lounge is colorful and confortable, among pieces of modern art and contemporary works. The adjacent atrium terrace is open for both drinks and meals and a rooftop bar is also planned. This modern hotel prides itself on personalised service, grounded in old-fashioned Italian hospitality. The concierge can even arrange tailor-made sightseeing trips and exclusive transport around Rome.
