The Melting Pot Carnival
On Sunday, 3th March, according to Rome Cavalieri costum, the appointment is with the famous Sunday Brunch, who will wear his colorful Carnival costume, proposing a gourmet journey with a typically Italian taste. The Executive Chef Fabio Boschero with the Uliveto team, will propose a gastronomic itinerary, which will enhance the celebrations that precede Lent, celebrating it with a brunch dedicated to the Italian carnival tradition, with a particular reference to the customs of each city. The live stations will offer “Bigoli in salsa busera di crostacei”, “Fegato alla veneziana e crostoni”, inspired by the Venetian culinary culture, but also a very careful selection of artisan cheeses, sausage from Lazio, dishes that take their names from the famous masks of the Italian Carnival – Insalata cobe “alla Pantalone” or Insalata Russa“ Arlecchino” – a selection of “pinse”, the famous “detox corner” for the most “virtuous” or, again, the selection of raw fish and the day’s catch. It is worth mentioning the sweetest corner of the buffet, by the Executive Pastry Chef Dario Nuti, which will amaze guests with a selection of typical Italian carnival sweets, such as Frappe, Castagnole, Zeppole di San Giuseppe and Migliaccio, with some references to that of Tuscany (the Pastry Chef does not betray its origins) like Schiacciata and Frittelle di Riso.
On Tuesday, 5th March, for a crackling “grand final”, here is an original Mardi Gras. Rome Cavalieri has been inspired by the colors of Brazilian carnival, to organize a theme mixology session. Boschero chef, who has many years of his profession in Brazil, will hold a fun masterclass to explain and present the different types of Caipirinha, according to Carioca tradition. A unique opportunity to discover the secrets of the perfect cocktail, with the musical accompaniment of a live Dj set in perfect “Brazilian Style”. Corollary of the cocktail will be the most famous “petiscos” of Brazil: Pastel De Carne E Queijo – the famous fried batter served with meat and cheese – Pao De Queijo Com Lagosta – typical Brazilian dish made with cassava starch, eggs, salt, milk, vegetable oil and cow’s cheeses – Bolinho De Bacalhau, Espeto De Picanha, to conclude with the typical sweet, the Brigadeiro Doce, prepared with condensed milk, chocolate and butter, which can’t be missed in a traditional carioca meal, and the Quindim, based on eggs and coconut. To create an even more amusing atmosphere, could the colors, that parade through Rio de Janeiro with the famous allegorical floats, be missing? Oreste Fiori will take care of it, re-creating the festive and hilarious mood of the city of the carnival, thanks to the decorations that will fill the Tiepolo Lounge with festoons and theme masks.

L’Uliveto Restaurant stages Sunday brunch between venetian masters and the royal blue pool. Fourteen corners, from antipasto to desserts, with fresh local produces and “live stations” for hot italian traditional dishes. Brunch is also enriched with asian and japanese, as sushi and noodles woked. There’s a corner dedicated to children with games and entertainment, accompanied by a food thought, prepared and served in the way that young people like to make Sunday Brunch a special event for the whole family. Widespread Art Gallery
The St. Regis Rome has signed a collaboration with the international art gallery “Galleria Continua” to introduce its guests to masterpieces of the best exponents of the contemporary art scene. The hotel will host a series of exhibitions every six months. The calendar has been inaugurated by Loris Cecchini, protagonist with the installation of four works located in the common areas of the hotel, so that they can be enjoyed and appreciated by all hotel guests. AcquaRoof Terrazza Molinari reconfirms a simple and essential kitchen, mainly by the sea. Spontaneous and refined, cuisine it is shaped by the character of the Chef Angelo Troiani (1 Michelin Star), assisted by Chef Claudia Ceppaluni; that stands out for its original format: le Gocce, small distilled taste to taste à la carte or within specific tasting routes; small gastronomic delights that arise from the encounter between Italian cuisine, the Roman culinary tradition and that of the Mediterranean.
Peculiarity of the Terrace is the essential relationship between kitchen and bar, with new proposals that combine food and drink, using the typical ingredients of cocktails in the preparation of dishes and the other way around. “Il Ferro e il Fuoco” Restaurant
The hotel’s new restaurant “Il Ferro e il Fuoco” is inspired by Renaissance atmospheres. The idea that led the project was to give life to a place that would transmit the history of the convent, while using modern furniture; warm colors have been chosen, such as gold and smoky gray, which fill the spaces without weighing them down.
The result is an intimate and cared space in every detail: even the mise en place is carefully studied to remember a historical table, with modern elements designed by Mario Luca Giusti, well-known artist who works with synthetic crystal.
Chef Emidio Gennaro Ferro (hence the name of the restaurant) offers a menu also inspired by the era of the Renaissance.
